Summer Salmon Recipes - Salmon with Dill Mayonnaise
A versatile seafood recipe, this summer salmon recipe is fantastic served hot or cold as part of a buffet or picnic lunch. Perfect!
Ingredients- Serves 4
1 ½lb/700g Wild Salmon fillets or salmon steaks
1 lemon
splash of white wine
Salt and black pepper
Melted butter for brushing
1 - 2 tbsp dill, chopped
6 - 10 tbsp mayonnaise(depending how much dill you like)
8 sheets 12” x 8” aluminium foil
Method
Preheat the oven to 190C/gas mark 5
Make a parcel using 2 sheets of foil per salmon fillet or salmon steak.
Brush the top piece with melted butter.
Place the salmon on the foil.
Brush some more melted butter over the salmon, squeeze over some lemon juice, add a splash of wine and season with salt and pepper.
Loosely scrunch the foil together.
Bake salmon in the oven for 10 minutes.
Mix the dill with the mayonnaise and season to taste with a little lemon juice, sea salt and pepper.
Serve hot or cold with a green salad and new potatoes.
Tip
If serving the salmon as part of a cold buffet or picnic it’s a good idea to put the dill mayonnaise in a separate container and serve it on the side.
