Smoked Salmon Caper Recipe

A great smoked salmon recipe for a party, the smoked salmon and capers recipe mix can be made ahead of serving thus freeing up your time so that you can enjoy the party and guests.

Ingredients - serves 10 - 20

  • 4oz/125g smoked salmon
  • Sliced white or brown bread
  • 1oz/25g butter
  • 1-2 teasp capers
  • cayenne pepper
  • freshly ground black pepper
  • chopped parsley

Method

Finely chop the smoked salmon and capers and mix together
Melt the butter in a saucepan, add the smoked salmon and capers, season with a little black pepper and cayenne (to taste). Mix well and leave to get cold.
Cut the crusts of the bread and then cut each slice into either 4 triangles or rectangles. Either brush with melted butter or olive oil and spread out on a baking tray.
Bake in a hot oven until golden brown and crisp. Take out and leave to cool.
When ready to serve pile a little heap of the smoked salmon recipe on top of each croute and sprinkle with some chopped parsley.

Tip

Instead of normal white or brown bread you can also use rye or pumpernickel bread, in which case don’t bake it, just cut into 4 shapes.

For economy you can purchase smoked salmon 'bits'. These taste every bit as good but cost a lot less.
