Keep warm with a smoked salmon soup recipe. Now that Winter's well on the way, a great way to keep warm and eat healthily is to make a large pot of soup. One of my favourite's is made with smoked salmon. You can easily buy the offcuts of smoked salmon from either the supermarket or fishmonger, these pieces of smoked salmon are much cheaper than the paper thin slices that you would normally use. And because they're going to be chopped up it makes sense to go for the cheaper pieces, they taste exactly the same as the slices, after all, smoked salmon is smoked salmon!
Here are the ingredients for a large pot of salmon soup, perfect after a walk on a chilly afternoon.
Ingredients - serves 8
1 oz unsalted butter or oil
2 chopped leeks
4 large potatoes, diced
2 litres/3 ½ pints chicken stock
11/2 litres/3 pints full fat milk
4 tabsp chopped fresh dill
8 tabsp lemon juice
300g/11oz smoked salmon pieces, chopped
black pepper and salt to taste
Method
Melt the butter in a large saucepan, add the chopped leeks and cook, stirring until softened. Add the diced potatoes and chicken stock, bring to the boil and then simmer gently for about 10 minutes or until the potatoes are cooked.
At this stage blend until smooth. Put back on the heat, add the milk, dill and lemon juice, reheat until hot.
Mix in the chopped salmon and season with black pepper. Check for saltiness before adding extra salt, remember that smoked salmon can be quite salty as can shop bought chicken stock.
Serve the salmon soup with crusty farmhouse bread.
Tip
This recipe is easily halved for fewer people.
