Salmon Patties
A really easy salmon recipe for salmon patties, (salmoncroquettes). A good tip is to buy the tail end of the salmon, it’s cheaper than salmon fillets but just as tasty.
Ingredients - serves 4
- 8oz/225g Salmon tail, skinned & boned
- 8oz/225g potatoes
- 4 spring onions (scallions) finely chopped
- 1 heaped tabsp chopped parsley
- Salt & pepper
- lemon juice to taste
- fine, fresh breadcrumbs
- 1 beaten egg
- oil for frying
Method
Boil the potatoes, mash and keep warm. Do not Season.
Spread the chopped spring onions over the base of a suitable oven proof dish and place the salmon tail on top.
Bake in a moderate oven (180C/350F) for 20 minutes or until cooked.
Alternatively, put the spring onions and salmon into a non metallic dish, cover with cling film, pierce and cook for about 1½ minutes at 80% power.
Take the salmon out and flake into a bowl. Add the spring onions, parsley, mashed potato, seasoning and lemon juice.
Mix well and leave to go cold.
When cold, shape into large, fat discs and leave on a cling wrap lined plate in the fridge until ready to be cooked.
To Fry
Heat about 1”/3cm vegetable or other suitable cooking oil until hot ((I like to use a wok because I feel that it’s safer and uses less oil)
Dip the salmon patties 1 by 1 first into the beaten egg then the breadcrumbs.
Place in the hot oil remembering to put them in facing away from you so that there’s less chance of being splashed by the oil.
Fry until hot and golden, turning halfway through. Drain on kitchen paper and serve with a butter sauce.
Tip
It’s important to use warm mashed potato, it makes it far easier to mix the salmon recipes together.
This is an easy salmon recipe to make, if you need to make more salmon patties just increase the quantities, remembering to add the same amount in weight of salmon to potato.
