Double Salmon Croquette

Leftover salmon lurking in the fridge? A Salmon croquette recipe (salmon patties) will solve the problem. Easy to make and economical too. The following recipe for salmon croquettes can be made the day before and reheated in a hot oven for a few minutes when needed.

Ingredients - serves 4

  • 8oz/225g cooked, flaked salmon
  • 3oz/75g smoked salmon, chopped8oz/225g cold mashed potato
  • 1 beaten egg
  • 1 tabsp chopped parsley
  • 1 teasp anchovy essence
  • Salt & Black pepper
  • 4oz/125g cornmeal (polenta)
  • 4oz/125g fresh breadcrumbs
  • vegetable oil for shallow frying

Method

Mix all the ingredients together except the cornmeal and breadcrumbs.
Put the cornmeal and breadcrumbs into a zip-lock (or similar) plastic bag.
Divide the mixture evenly into make 8.
Pop each one into the plastic bag and shake gently until covered.
Put them on a plate that’s been covered with cling film and chill for at least 15 minutes.
Shallow fry the croquettes until golden brown.
Serve with tomato sauce and peas or sweet corn.

Tip

Mini salmon croquettes make great buffet or party food. This mix should make about 24. Cook them the day before and when needed just reheat in a hot oven until warmed through (about 10 minutes).
