Salmon with Filo Pastry

Salmon fillets brushed with aromatic Dijon mustard and wrapped in filo pastry and baked. An easy salmon recipe. The finished salmon dish goes well with lightly steamed or sauteed vegetables and rice

Ingredients - serves 4

  • 4 x 6oz/175g salmon fillets - skinned
  • 8 sheets fresh filo pastry
  • 4oz/125g melted butter
  • salt and pepper
  • 4 tabsp Dijon mustard

Method

Preheat oven to 375 degrees F (190 degrees C).

Rinse the salmon fillets, dry on kitchen paper and season with salt and freshly ground pepper and brush generously with the Djion Mustard.

Take 2 sheets of filo pastry per salmon fillet. Brush the first one with melted butter and lay the other sheet on top of the first.

Place the salmon fillet close to the edge of the filo pastry and holding the salmon and filo pastry fold over once to make a parcel then take the sides of the filo pastry, fold towards the centre and continue rolling until you have a neat parcel of salmon in filo pastry. Brush all over with more melted butter and place on a baking sheet.

Repeat with the other 3 salmon fillets.

Bake in a preheated oven for about 20 minutes or until the parcels are golden brown.

Tip

Filo pastry is notorious for being difficult to handle. To make things easier always keep your filo sheets covered with a damp cloth until ready to use, this stops the pastry from breaking into pieces.
