South Georgia Salmon Patties

Delicious South Georgia salmon patties made with canned salmon make a heart healthy meal.

Ingredients

  • 1 can Pink Salmon
  • 1 onion minced
  • 1 egg beaten (can use only white if eating heart healthy)
  • just enough corn meal to "stick" the ingredients together
  • salt/pepper to taste

Method

Drain the canned salmon, reserving liquids, remove and discard all bones and skin. Mix all ingredients together, if mixture is "stiff" mix in some of the reserved juice until you can make a ball that will stick together. If too juicy, then add a little more cornmeal.

Once you have a good consistency, make whatever size balls of salmon you like and flatten in the palm of your hand to make the size patties you prefer.

In a skillet/frying pan, heat olive oil in the bottom of the pan to a very hot temperature. You should just barely coat the bottom, these are not fried, but more like sauted. Press the patties in the corn meal to coat both sides. Place in the hot pan, do not turn until the sides turn brown. Turn only once. These should be crispy outside, but moist inside.

Another way to cook the patties is in the oven on a "sprayed on" olive oil baking pan, turning only once to cook both sides.. Canned salmon is essentially already cooked, you just want to cook the other stuff! These are great on a salad, with rice and stewed tomatoes..anything really!
