Salmon Pasta Recipe with Broccoli
Easy baked salmon pasta recipe - a sure winner with the whole family.
Ingredients
- 200g/7oz broccoli
- 1 large can of red salmon
- 500g/1lb2oz dried pasta shapes
- 200ml/7fl oz milk
- 25g/1oz plain flour
- 25g/1oz butter
- 50g/2oz grated cheese
- salt & pepper
Method
Heat the oven to 200C/400F
Cut the broccoli into pieces.
In a pan of boiling water cook the pasta for 5 minutes and then add the broccoli and cook for a further 5 minutes. Drain
Make the sauce by melting the butter and adding the flour to make a roux. Gradually add the milk, stirring to prevent lumps. Bring the sauce to a boil and simmer, stirring for 3 - 4 minutes. Take off the heat, add half cheese and can of red salmon and season to taste.
Mix the broccoli and pasta into the sauce and pour into a greased baking dish. Sprinkle with the rest of the grated cheese
Bake for 20 - 30 minutes or until bubbling and tinged with brown.
Tips
If you’re short of time just reheat the salmon pasta recipe in the microwave and flash under the grill to brown the top.
Really short of time? Use a can of mushroom or celery soup (Heinz or Campbell’s is good) or a tub of fresh cheese or béchamel sauce (usually found in the chiller department of your supermarket).
