If you’re looking for a quick grilled salmon Recipe then this warm salmon salad using seared salmon is perfect.
Ingredients - Serves 4
450g/1lb Salmon fillet, skinned
3 tabsp runny honey
3 tabsp lemon juice
coarse ground black pepper
110g/4oz mixed salad leaves
110g/4oz trimmed French green beans, blanched
Dressing
2 teasp Wholegrain mustard
4 tabsp virgin olive oil
2 teasp runny honey
2 tabsp lemon juice
Method
Heat a non-stick char grill or frying pan over a high heat
Mix the honey, lemon juice and pepper together and brush on both sides of the salmon.
Cook for 3 - 4 minutes on each side or until browned and cooked to your liking. Set aside.
Mix all the dressing ingredients together.
To Serve
Divide the salad leaves and green beans between 4 serving plates. Break the salmon into large flakes and arrange on top of the salad. Spoon over the dressing.
Serve accompanied by a nice, crisp dry white wine.
Tip
As an alternative, try substituting the seared salmon with sliced, rare steak, grilled chicken breasts or tiger prawns.
