Cajun Spiced Grilled Salmon

A heady mix of hot, fragrant herbs and spices makes this spicy easy grilled salmon rub recipe a winner. Great for the BBQ, Grill or Chargrill.

Ingredients - serves 6 - 8

  • 1 x 6oz/175g Salmon Fillet per person
  • 2 tbsp Paprika
  • 2 tbsp cayenne pepper (or to taste)
  • 1 tbsp fresh ground black peppercorns
  • 2 cloves of Garlic, crushed
  • 3 tbsp onion flakes
  • 2 tbsp dried oregano or marjoram
  • Salt
  • Oil

Method

Mix all the dry ingredients except the Oil together with a mortar and pestle until powdery. Rub all over the salmon fillets on both sides and leave for 1 - 2 hours.

Heat a ridged grill pan, chargrill or BBQ until hot.
Spread some oil over the salmon fillets and place on the grill flesh side down.
Cook for 5 minutes.
Turn over and cook until done.
Test by poking a knife into the centre of the salmon fillet and look inside, the fish should flake easily.

Serve with a mixed salad and a can of cold beer (or larger if you’re British!)
