Easy Side Dish Cooling Relishes
Looking for easy side dishes to go with your fish? These two cooling side dish recipes are great with spiced and chilli hot dishes.
Red Onion & Cucumber Raita
Perfect with
Tandoori Salmon
they can also be used as dips. In the first recipe cooling Greek yoghurt is flavoured with sweet red onion and cucumber.
Ingredients
- 14floz/400g Natural Greek yoghurt (such as Total)
- ½ red onion, finely chopped
- ½ cucumber peeled, deseeded and finely chopped
- Salt
- 4floz/100ml cold water
Method
Pour the yoghurt into a bowl, whisk in the cold water and add the red onion and cucumber. Add salt to taste.
Cucumber & Pear Relish
Ingredients
- 1 Cucumber, peeled
- 6 Spring onions (scallions) finely sliced
- 3 large ripe pears, peeled
- juice of 1 lime
- salt & freshly ground black pepper
- 6 - 8 radishes, trimmed and halved
Method
Cut the cucumber in half and cut each half into half moon slices. Place in a bowl. Add the spring onions and radishes. Cut the pears into quarters and slice each quarter in to slices the same width as the cucumber slices. Mix with the cucumber and lime juice and season to taste.
