Chinese Style Baked Salmon with Black Bean Sauce

This baked salmon recipe is easy, quick and delicious.

Ingredients - Serves 4

  • 4 x 4oz/110g Skin on Alaska Salmon Fillets
  • 1" piece fresh ginger, peeled and grated
  • 4 tbsp black bean sauce such as Amoy or Blue Dragon
  • Sesame oil
  • 2 Tbsp Fish,Chicken stock or water
  • squeeze of lime juice
  • Salt and Black pepper



Method

Preheat the oven to 210C/gas mark 6.
Heat a heavy frying pan with an ovenproof handle over a medium heat.
Brush sesame oil on both sides of the salmon fillet and season with salt and pepper.
Cook salmon skin side down for 3 minutes, until seared.
Turn over and cook for 30 seconds more.
Transfer frying pan to the oven and bake for 4 minutes until the salmon filets are just firm when pressed.

Black Bean Sauce

Heat a large frying pan over a medium heat.
Add 1 tbsp sesame oil and the grated ginger, cook for 1 or 2 minutes.
Stir in the black bean sauce, stock or water, add a squeeze of lime juice to taste.
Serve the salmon fillets skin side up on a bed of egg noodles or with some rice with the black bean sauce spooned over.
