Bourbon Salmon Recipe

Easy baked salmon - bourbon salmon recipe. Ready to eat in ½ hour, marinade the salmon with a bourbon recipe for baked salmon and serve with rice.

Ingredients - serves 4

  • 4 x 6oz/175g Salmon fillets or steaks
  • 6floz/175ml Bourbon whiskey such as Jim Beam
  • 6floz/175ml light olive oil
  • 4 tabsp light soy sauce

Method

Preheat oven to 220°C/430°F .

In a small bowl, mix together the bourbon, olive oil and light soy sauce.

Line a baking sheet with tin foil and place the salmon fillets or steaks skin side down.
Brush the salmon with bourbon mix and bake, uncovered, for 10 - 15 minutes, continuing to baste the salmon with the marinade 2 or 3 times until the salmon flakes easily when prodded with the tip of a knife.
Place the remainder of the marinade in a small saucepan, bring to a boil then reduce the heat to low and cook gently for 3 or 4 minutes.
When the salmon is cooked, plate up and serve with rice. Pour the remaining marinade into a suitable container and serve on the side.
