Baked Salmon with Avocado Sauce

For a great baked salmon recipe which you can cook ahead this bake salmon recipe fit’s the bill. Perfect for a Summer Dinner Party.

Ingredients - serves 4

  • 4 x 6oz/175g Salmon Steaks
  • 4 sprigs fresh Tarragon
  • 2 bay leaves
  • 4 desrtsp white wine
  • Salt & Pepper

For the Sauce

  • 1 Avocado
  • 1 small pot crème fraîche
  • 1 garlic clove
  • 1 teasp white wine vinegar (or sherry vinegar)
  • Salt & Black Pepper
  • 1 bunch watercress

Method

Preheat the oven to 180C/350F/gas mark 4

Spread a large sheet of foil (large enough to fold over the salmon) over a shallow baking tray. Place the salmon steaks on the foil with a sprig of tarragon and ½ a bay leaf on each one. Season with salt and pepper and pour a dessert spoon of white wine over each one. Wrap the whole thing loosely in the foil and make a pleat in the top to seal it.

Bake the salmon steaks in the oven for 20 minutes then remove and leave to cool unwrapped.

To Prepare the Sauce

Halve, de-stone and peel the avocado and put into a liquidiser or blender along with the garlic clove and vinegar, season and blend until smooth.

Empty the crème fraîche into a bowl along with the avocado purée and mix thoroughly. Taste and check for seasoning - it may need a touch more vinegar. Cover and put in the fridge until needed.

To Serve

When you’re ready to serve the baked salmon, unwrap the foil, take the skin off the salmon steaks, remove the main bone (if there is one) and discard the herbs.

Place each salmon steak on a plate with some watercress in the hollow centres. Serve the avocado sauce separately.
