Baked Salmon Supper

Very simple all-in-one fish and 'chips'!

Serves 1

x1 fillet of salmon
3-4 thinly cut slices of potato
1/2 a lemon
butter
Salt & Pepper
A dash of water
Watercress and/or spinach (optional)



Lay a sheet of baking foil inside a baking tray.
Add a dash of water to the tray, about 1tbsp.
Lay out the slices of potato on the bottom and top with the salmon fillet.
Squeeze the lemon juice over the top and dot with 3-4 blobs of butter.
Season with salt and pepper.
Wrap the foil over the salmon and potato and place in the oven on Gas Mark 6/200C/400F for 20-30mins.
Lay out some spinach and/or watercress on a plate, when the salmon is done place on top and voila! Dinner is served.
