Seared Salmon with Watercress, Bacon and Pinenuts

An easy recipe for grilled salmon. Recipes such as this seared salmon recipe are a godsend. D'you want to be slaving away in the kitchen when everyone else is having all the fun? Get your kids to help but keep them away from the pinenuts or you'll have none left. (if this happens don't worry it's just as tasty without them). This seared salmon practically puts itself on the table.

Ingredients - serves 4 (easy to increase the amounts)

  • 2 bunches watercress, washed well and dried
  • 8 rashers thin streaky bacon (or proscuitto)
  • 4 x 6oz/175g salmon fillets, skinned and boned
  • 1 bunch fresh oregano or basil, leaves only
  • 3oz/75g toasted pinenuts
  • extra virgin olive oil
  • balsamic vinegar
  • Sea Salt and fresh ground Black Pepper

Method

Put the watercress in a large bowl.
Heat a ridged grill pan until really hot, cook the bacon and add to the watercress.
Put the oregano or basil in a small bowl, add the pine nuts and drizzle with olive oil, add about 2 tablespoons of balsamic vinegar, season and mix well.
Brush some olive oil over the salmon fillets and sear quickly on both sides in the grill pan until just turning a lighter pink in the middle.
Arrange the watercress and bacon on a plate and pop the salmon on at the last minute.
