Barbecue Recipes -
Thai Inspired Salmon Marinade

When you’re barbequing Salmon, barbecue recipes such as Thai inspired barbecue Salmon recipes marinade the salmon and keep the fish from drying out as it cooks.

Ingredients - serves 6 - 8

  • 1 x 6oz/175g Salmon Fillet or Salmon Steak per person
  • 2 sticks bruised lemon grass
  • 2 tbsp soy sauce
  • 2 cloves crushed garlic
  • 1 x 1 inch (2cm) piece of ginger, peeled and chopped
  • 1 red chilli finely chopped (leave the seeds in for extra heat if you wish)
  • 2 limes, juiced and skins kept
  • about ¼ pint (150ml) olive oil

Method

Mix all the ingredients including the used lime halves, for the marinade together.
Pop the salmon fillets or steaks in a non-corrosive dish and pour the marinade over the fish, turning the fillets over to coat both sides.
Leave for 1 - 2 hours.

Heat the BBQ until hot.
Place the salmon on the bbq flesh side down.
Cook for 5 minutes.
Turn over and cook until done.
Test by poking a knife into the centre of the salmon fillet and look inside, the fish should flake easily.

Serve with Thai fragrant rice.
