Quick, easy and simple. This baked salmon fillets recipe is perfect for a mid-week meal.
Ingredients - Serves 4
4 x 4-6oz/110g - 175g salmon fillets, descaled
1 lemon
3oz/75g each carrots & leeks very finely sliced
Dry white wine
Butter
Melted butter
Salt and Pepper
4 pieces each of aluminium foil and greaseproof paper each measuring 12" x 15"
Method
Heat the oven to 200C/400F/Gas 6
In a saucepan melt some butter and cook the carrot and leek gently for 5 - 10mins until soft but not coloured.
Whilst the vegetables are cooking, paint the melted butter on one side of the foil and put each piece of foil on top of a piece of greaseproof paper.
Spoon half of the vegetables on one half of the four foil pieces and place each salmon fillet on top then spoon the rest of the vegetables on top.
Season with salt and pepper, and sprinkle with some lemon juice and white wine.
Fold the other half of the paper and foil over the fish and seal around the edges by folding over 2 inches at a time to form a semi circle.
Place on a Baking Tray.
If preparing the baked salmon for cooking later, you can now put it in the fridge until ready to cook
This has to be one of the easiest Salmon recipes.
Bake for 10 minutes and serve.
